How about this: coin toss to start the game and winner of the toss gets to decide what end to defend for the first period. High-scoring teams might elect for a long-change while low-scoring teams go for the short change. This probably won't work very well since most coaches seem pretty traditional and would go for the short-change, especially since so many games end up with teams playing for extra time in the third. But if, for example, you're Anaheim and you win the toss against the Kings it could be a decent strategy and would add a new level of interest and uncertainty.
